Cooking with Taz: Stove Top Salmon

Here in Japan, because of limited space, grilling or baking isn't always an option. Here's a way to enjoy a delicious salmon dish that requires little time or space:

2 cloves garlic, minced
6 tablespoons vegatable oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
3 Salmon Fillet (skin on)
1 bay leaf (optional)

In a medium bowl, prepare marinade by mixing garlic, vegetable oil, basil, salt, pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade and bay leaf. Marinate in the refrigerator about 2 hours, turning occasionally.

Place fillets in aluminum foil, cover with marinade, and seal. Cook on medium heat approximately 15 minutes (more or less depending on thickness). Remove from foil and serve. :)

Cooking with Taz: Homemade Hamburger Helper in Japan

Hamburger Helper?
I know this is bad stuff:  MSGs, trans fats, HFCS, white pasta, ETC.  There’s not much in the ingredient list that grows in the soil or eats things that grow in the soil.  It is not real food.  That's why I decided to make my own!  All ingredients can be found at your local 100 yen store and it is quick, simple and delicious.  Plus, your kids will love it!!!

 

500g ground beef

400g Macoroni (the type I use is ready in 8 minutes)

1 can diced tomato (450g)

2 cloves garlic (minced)

1 tbsp basil

8 anchovy stuff olives sliced (optional)

1 large Eringi Mushroom (diced) http://en.wikipedia.org/wiki/Pleurotus_eryngii

5 slices of your favorite cheese (I use a mixed cheese variety)

2 cans of water (use tomato can)

 

Approx. 20 minutes and serves 5

Season beef with magic salt and garlic, brown and drain.  Add tomato, basil, mushrooms, olives and water.  Bring to a light boil and add the uncooked macaroni.  Lower heat and, while stirring occasionally, cook for 8 minutes or until macaroni is tender.  Turn off heat and place your cheese slices on top while the Helper is still hot.  Stir in the melted cheese and server with garlic bread.

Hatervision: pasta sauce from scratch!

Say What!?

In Japan they tend to shorten names of places and things. One day I was finishing a meeting and one of ladies there asked "who's hungry? ". It was lunchtime so, I raised my hand. She looked at me with a straight face and said "Do you want to go 'fu-king' with me?". Shocked? Yes, I was. After I regained my composure, I said "I'm sorry, but I'm married". She turned beet red, started shaking her head and waving her hand then said "no, no, no 'fu-king' means First Kitchen, a fast food restaurant!" After we both recovered from the embarrassment, we went to lunch and had a long conversation about effectively mixing English and Japanese.

Why Can't I See My Daddy?

I am a firm believer in kids needing both parents in their lives, even if those parents aren't together anymore.
And I also believe it is the right of the child to know both parents. When a parent decides to cut off contact between the child and the other parent, something is very wrong. Now, I am not naive, I fully understand that there are some situations where this may be a necessity (abuse, excessive alcohol/drug usage, etc...) but, outside of those special circumstances, there is no excuse to deny a child the right to know both parents. Eric Kalmus formed an organization,The Japan Children's Rights Network, to help. Here is his story:



"I was married in Dec. 1995 to Tomomi Ito in the Suginami-ku Tokyo ward office. Things started out great. She was a wonderfully happy woman, and I was excited to spend time with her. We had been dating for a short time probably 2 or 3 weeks and she became pregnant. We spoke about our options and in the end decided to have the baby. We were in love and couldn't imagine giving up our baby. After Tomomi was pregnant for about a month it was holiday season and we spent Oshogatsu (New Years) in her hometown of Omuta shi in Fukuoka Japan.
I spent time getting to know her parents, and they spent time telling her I was evil and she shouldn't have gotten married to a foreigner. Her father was very old school Japanese. It seemed he fought for the Japanese during World War II. His daughter had married the enemy. We spent two weeks for the holidays in Omuta and then retuned to Tokyo.
Shortly after returning to Tokyo she told me she wanted to move back home to have our baby. Without knowing that her family was against the fact that she had married a gaijin (non-Japanese) I agreed. I recall thinking that it would be a great experience. I also had no clue that she was planning living in the same house as her parents. Shortly after we moved to small town old Japan - home of the largest WWII POW camp.............."

Hip Hop for your Soul


Japanese plum wine cake 梅酒のケーキ

Everyone knows I love to cook but, I don’t often share my recipes.  I have decided to change that starting with this delicious cake.  ENJOY!

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup shortening
  • 2 2/3 cups brown sugar
  • 4 eggs
  • 1/2 cup milk
  • Japanese plum wine 6tablespoons
  • Japanese plums that were used in making the plum wine chopped 6
Directions
  1. Do not preheat the oven. Grease 10 inch tube pan and line bottom with wax paper or parchment paper.
  2. Sift together the flour, baking powder and salt. Set aside.
  3. In a large bowl, beat the butter, shortening, and sugar on low speed for 10 minutes. Add the eggs one at a time, blending well after each addition. Alternately add the flour mixture and milk, mixing well. Add the vanilla and lemon extracts.
  4. Add plum wine ( I say 6 tablespoons but it is up to your taste)
  5. Add chopped plums to batter
  6. Pour batter into the prepared pan. Set the oven temperature to 350 degrees F (175 degrees C. Bake for 1 hour and 20 minutes, or until a toothpick inserted into the middle of cake comes out clean. Allow cake to cool in the pan for 1 hour. Remove to a cake rack and cool for at least 3 hours.
